Joanie's Christmas Cake

Ingredients:

250gms butter (softened)
1 ¼ cup brown sugar
4 free range eggs
2 tablespoons orange marmalade
1.5kg mixed dried fruit raisins, currents, sultanas (no citrus peel)
225gms plain flour
75gms self-raising flour
2 teaspoons mixed spice
½ cup orange juice

Method:

Preheat oven (150c/130c fan forced). Line base and sides of square cake tin.
Beat butter & sugar together until combines. Beat in eggs one at a time until just combined.
Scrape mixture into a large bowl, add marmalade and fruit, mix thoroughly.
Sift flour and spice over mixture, add juice mix well
Drop mixture into corners of the tin to hold down baking paper. Spread evenly. Decorate with slivered almonds.
Bake uncovered for 3 hours. Remove cake from oven, cool cake in pan. Cover tightly with foil.
Enjoy a slice with a cuppa.
